Winter Warmer Porridge with Stewed Rhubarb
Wonderfully warming and rich in nutrients, it is easily digestible and high in soluble fibre.

You will need
2 cups (200g) Winter Warmer Porridge
4 cups (1 litre) liquid (Organic milk, soy, water, apple or pear juice).
Stir frequently over medium to low heat simmering until thick and creamy. This will take approximately 10 minutes. Do not speed up by increasing heat as this will cause the oats to clump reducing the creaminess.
Stewed Rhubarb
200gm rhubarb
1/4 cup (30g) organic soft brown sugar
1/2 cup (125ml) purified water
1/4 teaspoon ground mixed spice (optional)

1. Cut the rhubarb into small cubes and place in saucepan with sugar, spice and water.
2. Stirring frequently, bring to boil then reduce heat and simmer for 5 minutes.
To serve
Divide into bowls and spoon rhubarb mixture over hot porridge. Yoghurt may also be added at final point.

Rhubarb mixture may be served hot or cold and recipe can be increased and kept in airtight container in refrigerator for up to a week. Serves 4.
